Lemon & Shrimp Cream Cheese Salad
lemon Jell-O{2 packages}
1/2 c light cream
1 c stuffed olives (cut up)
1 c whipped cream
2 c hot water
1 8-oz cream cheese
1 c celery
1 c salad dressing
1.5 tsp finely chopped onion
1.5 c chopped shrimp
2 tsp lemon juice
4 tsp red pimento
Dissolve Jell-O in hot water. Cool until syrupy. Soften cream cheese with light cream and add to gelatin mixture. Stir in celery and olives. Whip cream and fold into mixture. Put in mold.
**Shrimp Dressing:**
Mix 1 c salad dressing, 1.5 tsp finely chopped onion, 1.5 c chopped shrimp, 2 tsp lemon juice, and 4 tsp red pimento and serve on top of Jell-O salad.
