Peanut Butter Oatmeal Cookies
0.75 cup shortening
1 cup peanut butter
1.5 cups firmly packed brown sugar
0.5 cup water
1 egg
1 tsp vanilla
3 cups uncooked oatmeal
1.5 cups flour
0.5 tsp baking soda
granulated sugar
Beat shortening, brown sugar and peanut butter until creamy. Beat in water, egg and vanilla. Add combined dry ingredients and mix well. Cover. Chill about 2 hours. Shape into 1-inch balls. Place on an ungreased cookie sheet and flatten with a fork dipped in granulated sugar to form a crisscross pattern. Bake for 9-11 minutes or until edges are golden brown at 350 degrees.
