Peanut Butter Oatmeal Cookies

0.75 cup shortening
1 cup peanut butter
1.5 cups firmly packed brown sugar
0.5 cup water
1 egg
1 tsp vanilla
3 cups uncooked oatmeal
1.5 cups flour
0.5 tsp baking soda
granulated sugar

Beat shortening
, brown sugar and peanut butter until creamy. Beat in water, egg and vanilla. Add combined dry ingredients and mix well. Cover. Chill about 2 hours. Shape into 1-inch balls. Place on an ungreased cookie sheet and flatten with a fork dipped in granulated sugar to form a crisscross pattern. Bake for 9-11 minutes or until edges are golden brown at 350 degrees.
